These travel well, are mostly healthy, kids like them, and they don't create big crumbly messes in the car.
2 cups oats
1 cup rice crispies
1 cup almond flour
½ cup ground flax seed
1 cup coconut flakes
1 cup peanut butter
1 bag mini marshmallows
½ cup butter
½ cup dried cranberries
½ cup mini chocolate chips
Coarse sea salt
Mix the oats, rice crispies, almond flour, coconut flakes, flax seed, and dried cranberries in a bowl. Melt the marshmallows and butter on the stovetop. When combined, add peanut butter and stir. Add the wet mixture to the dry and stir quickly before the mixture cools too much. Press into a parchment paper lined baking sheet and spread mixture. Use another piece of parchment paper to cover and apply pressure. Allow the bars to cool slighlty before adding the chocolate chips and any extra craisins, and follow it up with a light dusting of salt. Cover with parchment paper and press for a final time. Let cool in fridge before cutting up.
